Mixing Things Up

I am getting so tired of having the same things every week for dinner, the menu rarely changes. it has gotten to the point where I don't even enjoy cooking anymore. Do you have a favorite meal you would like to share? It can be a quick meal or one that takes all day to prepare, I just want to mix things up a bit.

One of the easiest casseroles I make is chicken and rice. You need 1 packet of yellow rice, 1 can of rotel, 2 cans of cream of chicken soup, 1 package of cheese and about 3-4 chicken breasts. Cook yellow rice as directed and boil chicken breasts. When done add the rice to a casserole dish, dump in the rotel, soup and chicken. Stir everything together and top it off with cheese. Cook in a preheated 350 degree oven until cheese is melted and soups are hot. That's it. Very simple but very good. I only do simple these days. I also have a very good ground beef and vegetable soup that is more or less dumping a bunch of cans in a pot, but it is very good. Much better than what you get in a store. But I don't know those ingredients by heart. I will try to remember to send it to you.

that recipe sounds perfect... All Brooke wants to eat these days is cheese and chicken!
